Can't eat: Apple Pie

BUT I CAN EAT: Gluten Free Apple "Crisp"

Since it is getting cool out, Fall is in the air, and I had a craving for apple pie or apple crisp. I decided to experiment.

I cut up & peeled about 6 apples (Macintosh), in pan on the stove I heated brown sugar & butter with some cinnamon, nutmeg & allspice... poured this over the apples & then made a little mixture of Kinnikinnick Pancake/Waffle Mix with more brown sugar & spices & mixed it up with the apples. In the oven for about 40 minues - and voila! A cake-like delight of apples that tasted very much like apple "crisp".

I put the crisp in quotes because it really wasn't crispy, it was more mush/cake-like, which I prefer. My mother made the same thing but just used gluten-free flour (as opposed to the pancake mix) and her's was TOO crispy.

I will have to try again to see if I get a new outcome, I missed the Oats in this, and I guess I'm still not sure if I can eat the oats, but if anyone has an alternative GF idea, that would be appreciated...

Thanks for the comment! i LOVE PF Changs and will be planning a trip there soon! Even before the GF Diet - one of my favorite things there was the Lettuce Wraps!

The Joy of Cooking has a gluten-free pie crust that is pretty good (though time-consuming to make).

As for restaurants, Legal Sea Foods and the Elephant Walk both have gluten-free menus and knowledgeable staffs.

Maybe substitute quinoa flakes for the oats - they add protein and are totally GF.

Just found your site. I don't know if you will get this posted very late ot a Sep post, but... as reagrds oats, they themselves don't have gluten but since they are for the most part grown and processed with wheat in the US, they are out ... EXCEPT there's a place in Nova Scotia (I think its Nova Scotia) that grows purely oats and processes them all by their lonesome, so they are gluten free. You can get them at The Natural Food Exchange in Stoneham Square (about 10 miles outside of Boston up 93 just inside 95). I was also very interested with your Wagamamma post. I lived in London for 4 years and used to go there ALL the time. I am very intrigued with them opening in Boston! Unfortunately, three kids and a subhurban life probably means I will never get there, but hey! For other GF blogs, have you tried the Gluten Free Gourmet (although I think she may have changed her name now). She has a recipe for THE BEST GF brownies.
