New Recipe: Coconut Lime Chicken Noodle Soup

Do you guys ever flip through "Everyday Food"?? It's an excellent little recipe magazine, that I used to have a subscription to, but just buy it occasionally now - but I miss it! It's full of quick, delicious recipes.

As I was flipping through the newest one, I come to a page with the big letters "GLUTEN FREE"
along the top and knew I'd make this first.... There are about 5 or 6 other recipes I plan on making soon.

Can I just tell you - it was DELICIOUS. So so good. Husband kept telling me how great it was, and how we should tell people about this recipe - and that we should bring it to Easter (haha)... He's a fan. And so am I! And it was easy, which I love.

I thought the recipe would be online, but it's not - so I'll type it out here (and I made a few adjustments):

Coconut-Lime Chicken Noodle Soup
6 oz. dried flat rice noodles
3.5 cups low-sodium chicken broth (I used 4 cups)
2-inch piece peeled fresh ginger, cut into 1/4 inch thick rounds
1 can (13.5 oz) unsweetened coconut milk
3/4 pound boneless, skinless chicken breast, thinly sliced
6 TBSP lime juice (from 3 limes)
3 TBSP fish sauce
2 TSP light-brown sugar
1 jalpeño, thinly sliced
3/4 cup packed fresh cilantro --- I didn't add this because I don't love cilantro - so we added about 3/4 of a cup of broccoli that I lightly cooked and added in - great addition!

Soak rice noodles according to package, drain.

In a large pot, bring broth and ginger to a boil over high. Reduce heat, cover and simmer 10 minutes. (At this point I wish I removed the ginger because the big chunks were a little overwhelming later on, although, I love ginger, so if you do - keep them in).

Add coconut milk to broth and return to a simmer. Add chicken and simmer until chicken is cooked through. Stir in lime juice, fish sauce, brown sugar, jalpeño and 1/2 cilantro (or broccoli). Cook for a few minutes. Add in noodles, mix, and serve immediately. Garnish with remaining cilantro.

Has anyone gotten their hands on this yummy looking snack? I saw Els Kitchen Medleys today on my GlutenFreely email that I get... They have cheddar and sour cream & onion and original. Looks like a great snack. I'll let you know if I find it or maybe I'll order it online.

A few things...

Hi there.... Hope everyone is well. I haven't been posting much, mostly because I haven't really been cooking much, also haven't had many new GF finds to share - although when they do pop up, I will share.

When I do cook, I've been trying to make us healthy-ish meals (to balance the inevitable Friday night pizza order)... The other night I baked salmon with lemon (and just a little butter), and roasted Kale - KALE CHIPS! They are sooooo good. We love them. And it's so simple. I think I also made some spicy brown rice with red pepper.


To balance out healthier evenings. I've been eating out at lunch more than I should (as evidenced by my previous Uno Due Go post).... The big news is that Chipotle opened around the corner from my office. DANGEROUS. it's soooo delicious. And almost the entire menu is gluten free, here's a link to the ingredients/allergy info. Oh, and a new GF beer find: New Planet "Tread Lightly Ale" beer. It was OK. Not my fave. It was $10 for a 4-pack, so I'll probably stick to Redbridge - but some of you might like this. New Planet has a few varieties of GF beer as well!

Uno Due Go - Serves GF Pizza!

I haven't been cooking much because of my crazy work schedule - so I found myself having to buy lunch again the other day, and took to Google to see if MAYBE there were any new spots in downtown Boston that had gluten free options.

To my surprise - there was! Uno Due Go. It's part of Uno's Pizzeria - and it looks like there are 5 locations so far - Boston, Cleveland, Whitewater WI, and two in DFW Dallas airport.

I've had a pizza-problem lately (can't stop eating it when I find it GF) - so I walked over (On Summer St in Boston) and ordered myself a tomato & cheese thin-crust GF pizza.

It took a little while - but I noticed that the guy I ordered from went around behind the pizza oven to an area in the back where they made my GF pizza - assuming it was to avoid cross contamination, which was great. The GF pizza was also only $7, which I think is a pretty good deal. It's not huge, but it's not tiny either. The box was the size of my keyboard. Look how delish:

The sauce was really good - so was the crust actually - normal tasting. Had a good crunch on the edges. It was a bit of a walk from my office so I carried it in the 35-degree weather back, so it was a little cold by the time I got back, but that didn't finish me from devouring the whole thing.

I LOVE that I can get pizza near my office if I want it. My GO-TO used to be NEBO - and I still love them, but their pizza, which is smaller than this, is $16 -- and it has a faint weird GF taste, this definitely doesn't. The other thing that's bad about this place is it's right around the corner from my gym. I see a lot of wasted work-outs in my future.

More on Glutino's Genius bread


So I posted the other day about Glutino's Genius Multigrain bread. I've made a few more things so I thought I'd share. It's been holding up pretty good! Although, to my own fault, it says to keep frozen, but I like to keep in the fridge (as I usually go through the loaf within a week) but I'm noticing it's starting to get a little crumbly. But the flavor is so normal! So is the size!

This weekend we went with french toast. I wanted to do a baked french toast, but my husband wanted his gluten-filled baguette so I just did it on the stove. Held up well!

gross - could I put more syrup on those 2 slices?

Pinkberry

I feel like I've been hearing about Pinkberry for a long time, but I finally had it yesterday, and I see what all the hype has been about. YUM.

I got the coconut yogurt with raspberries, strawberries and mango. The coconut yogurt is SO GOOD. Highly recommended - and all of their yogurt is gluten free.

There is a Pinkberry in Boston in the Prudential Mall.


(ps - the mochi topping is NOT gluten free, it has wheat in it! check out their site for all nutrition and allergen information)

New gluten free bread find


Genius by Glutino's Multigrain Sandwich bread mainly caught my eye due to its 'normal' size. I am a big Udis fan, but sometimes I just wish the slices were bigger!

This loaf has nice big thick slices and tastes really good - like, normal bread. It's also very light, no dense brick-like bread here.

I keep looking for bread that has a little more nutrition in it - I'm not sure this is it. But it's good!

This bread would probably make excellent French Toast.

Have you tried Genius? Did you like it? Better than Udis?
